Ingredients
Cauliflower rice base: Lightly cooked, chilled cauliflower rice replaces the greens for a heartier, sushi-bowl-style base.
- Cook the riced cauliflower in a dry skillet over medium-high heat 4–5 minutes, until just tender, then cool and toss it with half the dressing in place of the greens.
Dairy-free: A second avocado, mashed with lemon and salt, stands in for the cream cheese as the creamy element.
- Add a spoonful of the lemony mashed avocado to each bowl where the cream cheese would go, and sprinkle the everything seasoning over it.
Budget (canned salmon): Flaked canned salmon makes a cheaper, pantry-friendly bowl, and it is fully cooked rather than cold-smoked.
- Flake the salmon into large pieces and season it with a squeeze of lemon and a pinch of salt before adding it to the bowls.

Instructions
-
Bring a saucepan of water to a boil, lower in the eggs and simmer 7 minutes for jammy yolks. Transfer to ice water for 5 minutes, then peel and halve.
-
Mix the sesame seeds, poppy seeds, dried garlic, dried onion and flaky salt for the everything seasoning (or use 1 tbsp store-bought everything bagel seasoning).
-
Whisk the olive oil, lemon juice, Dijon and a pinch of salt. Toss the greens and cucumber with half the dressing.
-
Divide the greens among 4 bowls. Top with the smoked salmon folded into loose ribbons, the avocado and the halved eggs, and add a spoonful of cream cheese to each bowl.
-
Scatter with the red onion, capers and dill, drizzle with the remaining dressing and sprinkle the everything seasoning over the eggs, avocado and cream cheese.
Tips for success
-
Whipped cream cheese is easier to dollop. Beat softened block cream cheese with 1 tbsp water or lemon juice for the same effect.
-
Cold-smoked salmon (lox) isn’t recommended during pregnancy; use the canned salmon version below instead. Smoked salmon is already salty, so go easy on extra salt.

Nice to have, not needed
- Store-bought everything bagel seasoning is a handy shortcut — check that it is just seeds, garlic, onion and salt.
Storage & meal prep
- Best eaten fresh
Reheat: Serve cold.
Prep tip: Boil the eggs and mix the seasoning and dressing up to 3 days ahead; assembling a bowl then takes about 3 minutes.
Best assembled fresh. Jammy eggs keep up to 3 days peeled in the fridge and opened smoked salmon up to 3 days; keep the dressing separate and slice the avocado just before eating.
