Ingredients
Seared salmon: Warm, crisp-skinned salmon in place of canned tuna — a dinner-party Niçoise.
- Pat the salmon dry and season with salt. Sear skin side down in the oil over medium-high heat for 4–5 minutes, until the skin is crisp, then flip and cook 2–3 minutes more, until it reaches 145°F (63°C) in the thickest part.
- Break it into large pieces and set it in the center of the platter in place of the tuna.
Egg-free: No eggs: sliced avocado and artichoke hearts fill out the platter with plenty of richness. The vinaigrette is already egg-free.
- Skip the eggs. Arrange the avocado and artichoke hearts in their own groups on the platter, and drizzle the avocado with a little vinaigrette straight away so it stays green.

Instructions
-
Bring a medium pot of salted water to a boil and set up a bowl of ice water. Lower in the eggs and cook 9 minutes for firm whites with slightly jammy yolks (11 minutes for fully set), then move them to the ice water.
-
Add the green beans to the same boiling water and cook 3–4 minutes until bright green and crisp-tender. Scoop them into the ice water to stop the cooking, then drain and pat dry.
-
Make the vinaigrette: let the shallot sit in the vinegar with a pinch of salt for 5 minutes to mellow, then whisk in the mustard, olive oil, parsley and pepper.
-
Peel and halve the eggs. Toss the lettuce leaves with 2 tablespoons of the vinaigrette and arrange them on a large platter.
-
Arrange the green beans, tomatoes, radishes, olives and eggs in groups over the lettuce and set the tuna in the center in large flakes.
-
Spoon the remaining vinaigrette over everything, scatter with the capers and anchovies (if using) and season with the rest of the salt.
Tips for success
-
With no potatoes, the eggs, beans and olive-oil tuna carry the heft. For a warm, potato-like element, add a handful of garlic butter roasted radishes.
-
Oil-packed tuna is richer and more tender than water-packed and is the traditional choice; a spoonful of its oil makes the dressing even better.
-
For a dinner-party version, swap the canned tuna for flakes of garlic butter salmon.
Nice to have, not needed
- Oil-packed tuna is richer and more tender — water-packed works with an extra drizzle of olive oil.
Storage & meal prepMeal-prep friendly
- Keeps 3 days in the fridge
- Doesn’t freeze well
Reheat: Serve cold
Prep tip: Boil the eggs and blanch the beans on prep day; with everything in separate containers, a platter comes together in 5 minutes.
Keep the components separately in the fridge for up to 3 days and assemble just before serving.
