Ingredients
Hearts of palm "pasta" salad: Hearts of palm noodles instead of lettuce make a potluck-ready Italian pasta salad that holds up for days.
- Rinse the hearts of palm noodles well, pat them dry and cut them into 2-inch (5 cm) lengths.
- Toss them with everything else and all of the vinaigrette, and chill for at least 1 hour before serving.
Vegetarian: No cured meats — marinated mushrooms and extra mozzarella keep it substantial.
- Leave out the salami and pepperoni and add the mushrooms and extra mozzarella to the marinating mixture; the mushrooms soak up the vinaigrette as they sit.

Instructions
-
Whisk the olive oil, vinegar, Dijon, garlic, oregano, salt and pepper in a small jar or bowl until emulsified.
-
In a large bowl, combine the salami, pepperoni, provolone, mozzarella, artichokes, roasted peppers, olives, tomatoes and red onion. Pour over half the vinaigrette and toss. Let it marinate for 10–15 minutes (or up to 4 hours in the fridge).
-
Just before serving, add the romaine and basil and toss with the remaining vinaigrette.
Tips for success
-
Marinating everything except the lettuce lets the cheese and vegetables soak up the vinaigrette — and you can make that part ahead for parties.
-
Bottled Italian dressing often has added sugar; the homemade vinaigrette takes 2 minutes. Sliced pepperoncini are a classic, tangy addition if you have a jar.
-
Check the labels on jarred artichokes and roasted peppers and choose ones packed in oil or brine without sugar.
Nice to have, not needed
- Sliced pepperoncini add a classic tangy bite — skip them if you have no jar open.
