Instructions

  1. Place a rimmed sheet pan on a rack in the lower third of the oven and heat to 425°F (220°C).

  2. Trim the root tails and stems and halve the radishes, quartering any larger than a walnut so the pieces are roughly the same size. Pat them completely dry.

  3. Toss the radishes with the oil, salt and pepper. Carefully pull out the hot pan and spread them cut side down in a single layer, with a little space between each.

  4. Roast 20–25 minutes, flipping once after 15 minutes, until the cut faces are deep golden, the skins look slightly wrinkled and a knife slides into the center easily.

  5. While they roast, melt the butter in a small pan over low heat with the garlic and thyme for 1–2 minutes, until fragrant. Toss the hot radishes in the garlic butter, scatter with parsley and serve right away.

Tips for success

  • Roasting transforms radishes: the sharp bite fades and the inside turns tender and mild, much like a roasted new potato. Red, pink or French breakfast radishes all work.
  • A preheated pan sears the cut sides the moment they touch it. Crowd the pan and you get pale, steamed radishes instead.
  • Garlic burns at 425°F (220°C), so it goes into the butter at the end rather than onto the pan. Serve with crispy chicken thighs or steak bites.

Nice to have, not needed

  • Fresh thyme and parsley make the garlic butter taste brighter — a pinch of dried thyme works if that is what you have.
