Ingredients
With avocado: Diced avocado folded through makes a chunkier, richer salsa that sits halfway between pico and guacamole.
- Fold in the avocado gently just before serving so the cubes keep their shape. Eat within a few hours.
Strawberry-jalapeño salsa: Diced strawberries replace the tomatoes for a sweet-hot summer salsa that’s great with grilled fish, chicken and pork.
- Use the diced strawberries in place of the tomatoes and let the salsa stand only 5–10 minutes before serving, because berries soften quickly.

Instructions
-
Dice the tomatoes into ¼-inch (6 mm) pieces, discarding the watery seeds, and put them in a bowl.
-
Add the onion, jalapeño, cilantro, lime juice, salt and garlic (if using); stir gently.
-
Let stand 15 minutes so the salt draws out the juices and the flavors blend. Taste and add more lime, salt or jalapeño.
-
Just before serving, use a slotted spoon to leave excess liquid behind.
Tips for success
-
Roma tomatoes are meaty with few seeds, so the salsa stays chunky instead of soupy.
-
For a milder onion bite, soak the diced onion in cold water for 5 minutes and drain well.
-
Pile onto pork rind nachos, fish taco wraps or fajita bowls, or fold into guacamole.
Storage & meal prepMeal-prep friendly
- Keeps 3 days in the fridge
- Doesn’t freeze well
Reheat: Serve cold
Prep tip: Drain off the liquid before serving leftovers — it gets juicier every day.
Best the day it’s made. Refrigerate up to 3 days; it softens and releases more liquid over time.
