Instructions

  1. Chop the pickles and onion as finely as you can. Small pieces give the classic speckled look.

  2. Whisk the mayonnaise, ketchup, vinegar, sweetener, paprika and garlic powder until smooth, then stir in the pickles and onion.

  3. Season with salt and pepper and chill at least 30 minutes so the flavors blend. Thin with a teaspoon of pickle brine for a pourable salad dressing.

Tips for success

  • Sweet relish is where bottled Thousand Island gets most of its sugar. Dill pickles plus a pinch of sweetener give the same sweet-sour crunch.
  • Use homemade sugar-free ketchup for the cleanest flavor.
  • Spoon it over a wedge salad or cheeseburger lettuce wraps, or use it as the dressing for a Reuben-style bowl of corned beef, sauerkraut and Swiss.

Storage & meal prepMeal-prep friendly

  • Keeps 7 days in the fridge
  • Doesn’t freeze well

Reheat: Serve cold

Prep tip: Stir before using; the pickles release a little brine as it sits.

Refrigerate in a sealed jar up to 1 week.
