Ingredients
Nut-free (seed & coconut): Pumpkin seeds, sunflower seeds and coconut flakes replace all three nuts, so it works for nut allergies and nut-free schools. It is just as crunchy and slightly more savory.
- Seeds and coconut flakes brown faster than nuts. Start checking at 18 minutes and pull the pan when the coconut is golden at the edges, usually 20–25 minutes.
Chocolate: Cocoa in the coating and sugar-free chocolate chips folded in at the end make dark, crunchy clusters that taste like chocolate cereal.
- Whisk the cocoa and extra sweetener into the coconut oil mixture before pouring it over the nuts.
- You can’t judge browning by color with cocoa, so go by smell and time: bake 25 minutes and pull it as soon as it smells toasty.
- Stir in the chocolate chips only after the granola has cooled completely.
Vegan (flax binder): A ground-flax gel replaces the egg white to glue the clusters together, so the granola is fully plant-based. The clusters are a little smaller but just as crisp.
- Stir the ground flaxseed into the warm water and let it stand 5 minutes, until thick and gel-like. Use it in place of the foamy egg white.
- Press the granola down extra firmly on the pan, and let it cool completely before breaking it up, since the flax binder needs that time to set.

Instructions
-
Heat the oven to 300°F (150°C) and line a rimmed baking sheet with parchment.
-
Combine the pecans, walnuts, almonds, coconut, pumpkin seeds and hemp hearts in a large bowl.
-
In a small bowl, whisk the egg white until foamy, then whisk in the melted coconut oil, sweetener, cinnamon, vanilla and salt. Pour over the nut mixture and toss until everything is evenly coated.
-
Spread on the baking sheet in an even layer about ½ inch (1 cm) thick and press down firmly with a spatula. Compacting it is what creates clusters.
-
Bake 25–30 minutes, rotating the pan halfway, until golden brown and fragrant. Watch the last 5 minutes closely, because coconut goes from toasted to burnt quickly.
-
Let cool completely on the pan without stirring, at least 30 minutes; it crisps as it cools. Break into clusters.
Tips for success
-
The egg white is the secret to big, crunchy clusters. Skip it and you'll get a looser, crumbly granola.
-
Stir in a handful of sugar-free chocolate chips once it's completely cool so they don't melt.
-
Serve with cold unsweetened almond milk, or sprinkle over a Greek yogurt parfait or chia pudding.
Nice to have, not needed
- A pinch of flaky salt over the granola as it comes out of the oven sharpens the sweetness — the salt in the coating is enough on its own.
Storage & meal prepMeal-prep friendly
- Keeps 7 days in the fridge
- Freezes up to 3 months
Reheat: Eat at room temperature; re-crisp in a 300°F (150°C) oven for 5 minutes if it softens.
Prep tip: A sealed jar at room temperature keeps it crunchy for 2 weeks, so it doesn't need the fridge.
Store airtight at room temperature up to 2 weeks, or freeze up to 3 months.
