Ingredients
Dairy-free & nut-free: Coconut milk replaces the almond milk and cream, and pumpkin seeds replace the pecans. It is just as creamy and safe for both dairy and nut allergies.
- Skip the butter on top, or use a teaspoon of coconut oil instead.
Pumpkin pie: Pumpkin purée and warm pumpkin pie spice stirred into the porridge make an autumn breakfast that tastes like pie filling.
- Whisk the pumpkin and spice into the almond milk before it goes into the pan. Pumpkin thickens the porridge, so add an extra splash of almond milk at the end if needed.
Peanut butter: A spoonful of peanut butter melted into the hot porridge adds protein, staying power and a salty-sweet flavor.
- Stir the peanut butter in with the cream at the end, while the porridge is hot enough to melt it smoothly. Use chopped peanuts instead of pecans on top if you like.

Instructions
-
Combine the hemp hearts, flaxseed, chia seeds, coconut, cinnamon and salt in a small saucepan.
-
Whisk in the almond milk and water and set the pan over medium-low heat.
-
Cook, stirring often, 3–5 minutes, until it bubbles gently at the edges and thickens to the consistency of loose oatmeal.
-
Take it off the heat and stir in the cream, sweetener and vanilla. Let it stand 2 minutes; the flax and chia keep thickening as it rests.
-
Loosen with a splash more almond milk if needed, divide between bowls and top with the pecans and a pat of butter, if you like.
Tips for success
-
Hemp hearts give the most oat-like texture. Don't replace them with extra flax or chia, or the porridge turns gluey.
-
Mix a big jar of the dry ingredients so breakfast is minutes away on busy mornings. Per serving, cook a heaping ⅓ cup of the mix with ½ cup almond milk and 2 tablespoons water.
-
A few raspberries or a spoonful of keto granola add color and crunch.
Nice to have, not needed
- Toasted pecans and a pat of butter on top make it richer — it is creamy and filling without them.
Storage & meal prepMeal-prep friendly
- Keeps 3 days in the fridge
- Doesn’t freeze well
Reheat: Microwave about 1 minute with a splash of almond milk, stirring halfway.
Prep tip: Mix several portions of the dry ingredients in a jar, so a hot breakfast is 5 minutes away.
Best fresh. Refrigerate leftovers up to 3 days and reheat with a splash of almond milk. The dry mix keeps 1 month in an airtight jar.
