Ingredients
Vegetarian almond crust: Almond flour and parmesan make a golden, meat-free crust in place of the pork rinds.
- Mix the almond flour with the parmesan and spices for the coating. It browns faster than pork rinds, so start checking at 15 minutes (8 in the air fryer).
Spiced roasted (no breading): Whole pods tossed in oil and the same smoky spices, then roasted until browned and tender — quicker, and free of egg and dairy.
- Leave the pods whole (halve any large ones lengthwise), dry them well and toss with the oil, spices and salt.
- Roast on a parchment-lined pan at 425°F (220°C) for 15–20 minutes, shaking once, until browned at the edges and tender.
With Cajun remoulade: A tangy, spicy Louisiana-style dipping sauce of mayo, mustard, hot sauce and pickle to serve alongside.
- Stir the mayonnaise, mustard, hot sauce and pickle with a pinch of the smoked paprika and chill while the okra bakes. Serve it for dipping.

Instructions
-
Heat the oven to 425°F (220°C). Set a wire rack on a rimmed sheet pan and brush it with a little of the oil. (Air fryer: heat to 400°F / 200°C.)
-
Rinse the okra and dry it completely before cutting — wet okra turns slimy. Trim the stems and slice the pods into ½-inch (1.25 cm) rounds.
-
Beat the egg with the water and a pinch of the salt in a large bowl. In a second bowl, mix the pork rind crumbs, parmesan, paprika, garlic powder, onion powder, cayenne and remaining salt.
-
Toss the okra in the egg until coated, then lift it out with a slotted spoon, letting the excess drip back. Add it to the crumbs in two batches and toss until well coated, pressing the crumbs on.
-
Spread the okra on the rack in a single layer and drizzle or spray with the remaining oil. Bake 18–22 minutes, turning once halfway, until deep golden and crisp. Air fryer: cook in batches for 10–12 minutes, shaking the basket halfway.
-
Serve hot, with ranch or hot sauce for dipping.
Tips for success
-
Okra's slipperiness comes from its sap, which flows when the pods are cut and wet. Dry pods, a hot oven and serving straight away keep it in check.
-
Pick small, firm, bright green pods under 3 inches (8 cm) long. Larger pods turn woody; if that is all you have, slice them thinner.
-
Frozen cut okra works — thaw it on paper towels and pat it very dry first. Serve with collard greens and crispy chicken thighs for a Southern plate.
Nice to have, not needed
- A wire rack lets hot air reach the underside so the okra crisps all over — on parchment, flip the pieces halfway.
Storage & meal prep
- Keeps 1 day in the fridge
- Doesn’t freeze well
Reheat: Re-crisp in a 400°F (200°C) air fryer or oven for 3–5 minutes — not the microwave.
Best eaten right away. Refrigerate leftovers up to 2 days and re-crisp in a 400°F (200°C) air fryer or oven for 3–5 minutes.
