Ingredients
Spicy yum yum: Sriracha stirred in turns it orange-red and adds a garlicky chili kick. Try it on sushi bowls and burgers.
- Whisk the sriracha in with the other ingredients and use a little less water, since sriracha also thins the sauce.
Lighter (half yogurt): Half the mayonnaise is replaced with Greek yogurt for a tangier sauce with roughly half the calories.
- Whisk the yogurt in with the mayonnaise. It’s thicker, so you may need all of the water, and it keeps 5 days.

Instructions
-
Whisk the mayonnaise, tomato paste, melted butter, rice vinegar, sweetener, garlic powder, paprika and cayenne until completely smooth.
-
Whisk in the water a tablespoon at a time until the sauce is thick but drizzly.
-
Cover and refrigerate at least 2 hours, ideally overnight. The paprika blooms, the color deepens and the flavors mellow into that familiar steakhouse taste.
Tips for success
-
Let the butter cool before whisking it in, or it can make the mayo loose and greasy.
-
Restaurant versions are sweetened with sugar; allulose dissolves cleanly into this cold sauce.
-
Drizzle over hibachi-style shrimp, steak or chicken with cauliflower fried rice, or use it as a dip for grilled vegetables.
