Ingredients
Nut-free: Sunflower seeds, extra pepitas and coconut stand in for the nuts, so the mix can go to nut-free schools and offices. Check that your chocolate chips are made in a nut-free facility.
- Seeds need less time than nuts: toast the sunflower seeds and all the pepitas together for 6–8 minutes, adding the coconut for the last 3 minutes. Cool completely before adding the chocolate.
Cinnamon-roasted: The nuts are tossed in butter, cinnamon and a little sweetener before toasting, for a sweeter, cinnamon-roll-style mix.
- Toss the almonds, pecans and macadamias with the melted butter, sweetener and cinnamon before they go into the oven. Toast and add the seeds and coconut as written, then let the mix cool completely so the coating sets before you add the chocolate.

Instructions
-
Heat the oven to 325°F (165°C). Spread the almonds, pecans and macadamias on a rimmed baking sheet and toast for 8 minutes.
-
Scatter the pumpkin seeds and coconut flakes over the nuts and toast 3–4 minutes more, until the coconut edges are golden. Sprinkle with the salt.
-
Cool completely, at least 20 minutes, so the chocolate won’t melt, then toss in the chocolate chips.
-
Portion into ¼-cup bags or small jars for easy snacking.
Tips for success
-
Toasting is optional, but it makes raw nuts taste noticeably richer and crunchier.
-
Coconut goes from golden to burnt in moments — stay close during the last few minutes.
-
Leave out cashews and dried fruit, the carb-heavy parts of regular trail mix. Hazelnuts, Brazil nuts and cacao nibs are good swaps.
Storage & meal prepMeal-prep friendly
- Keeps 7 days in the fridge
- Doesn’t freeze well
Reheat: Eat at room temperature
Prep tip: Keeps up to 2 weeks airtight in a cool spot. Portion into ¼-cup bags or jars right away so each one is a single serving.
Store airtight in a cool spot up to 2 weeks (warm rooms soften the chocolate).
