Instructions

  1. Stir the almond butter, sweetener, vanilla and salt in a bowl until smooth. If the almond butter is stiff from the fridge, warm it for 10–15 seconds first.

  2. Add the protein powder, coconut, hemp hearts, flaxseed and chia and mix with a sturdy spatula, pressing the mixture against the bowl, until evenly combined. It should hold together when squeezed; if it’s crumbly, work in the water a teaspoon at a time.

  3. Fold in the chocolate chips. If the mixture feels soft or oily, chill it for 10–15 minutes.

  4. Scoop level 1-tablespoon portions and roll them between your palms into 16 balls. Set them on a parchment-lined plate and refrigerate at least 30 minutes to firm up.

Tips for success

  • Protein powders absorb liquid very differently. Add the water slowly: too wet and the bites slump, too dry and they crumble.
  • Whey isolate gives the softest, cookie-dough texture. Plant protein blends work too, but usually need an extra tablespoon of water and taste a little earthier.
  • Check the almond butter label. It should list only almonds (and maybe salt), since sweetened spreads add sugar.

Nice to have, not needed

  • A small cookie scoop makes even bites quickly — a tablespoon measure works just as well.
  • Rolling the finished balls in a little extra shredded coconut makes them prettier and less sticky to pack; plain ones taste just as good.

Storage & meal prepMeal-prep friendly

  • Keeps 7 days in the fridge
  • Freezes up to 3 months

Reheat: Eat straight from the fridge; frozen bites soften in about 10 minutes.

Prep tip: Freeze half the batch in a zip-top bag and move a few to the fridge each week, so there’s always a snack ready.

Refrigerate in an airtight container up to 1 week, or freeze up to 3 months.
