Ingredients
Blue cheese steak butter: Crumbled blue cheese mashed into the butter makes the steakhouse topping that melts into a tangy, savory sauce.
- Mash the blue cheese in with the herbs, leaving out the lemon zest and rosemary, and cut the salt to a pinch, since blue cheese is salty.
Sun-dried tomato & basil: Chopped sun-dried tomatoes and basil make an Italian-style butter for chicken, fish and zucchini.
- Pat the sun-dried tomatoes dry before chopping, then mash them into the butter with the basil in place of the parsley and rosemary.
Cinnamon “honey” butter: A sweet, steakhouse-style butter whipped with allulose and cinnamon instead of garlic and herbs. Spread it on warm keto biscuits, muffins and waffles.
- Beat the butter with the sweetener, cinnamon, vanilla and just a pinch of the salt until light and fluffy, about 2 minutes, then roll and chill as written. Try it on almond flour pancakes or almond flour waffles.

Instructions
-
Let the butter soften at room temperature until it’s easy to mash with a fork, about 1 hour. Don’t melt it, or the herbs will sink and the butter turns greasy.
-
Mash the butter with the garlic, parsley, chives, thyme, rosemary, lemon zest, salt and pepper until evenly speckled.
-
Spoon the butter in a rough line onto a sheet of parchment or plastic wrap. Fold the sheet over and roll the butter into a log about 1½ inches (4 cm) thick, then twist the ends tight like a candy wrapper.
-
Refrigerate at least 2 hours, until firm (or freeze for 30 minutes). Slice into ¼-inch (6 mm) coins as needed.
Tips for success
-
Top a resting steak with a coin, as for a pan-seared ribeye, or melt it over salmon, roasted vegetables or cauliflower mash.
-
Using salted butter? Leave out the salt, then taste and add a pinch only if needed.
-
Toss a few slices with hot zoodles for an instant garlic butter sauce.
Nice to have, not needed
- A stand mixer whips it lighter and faster — a fork and a sturdy bowl work fine.
Storage & meal prepMeal-prep friendly
- Keeps 7 days in the fridge
- Freezes up to 3 months
Reheat: Use straight from the fridge; slice frozen logs with a knife dipped in hot water.
Prep tip: Freeze half the log pre-sliced into coins, so you can drop one onto a steak or vegetables straight from the freezer.
Refrigerate, tightly wrapped, up to 1 week, or freeze up to 3 months. Slice frozen butter with a warm knife.
