Ingredients
Spiked (gin or vodka): A shot of gin per glass turns it into a crisp, herbal summer cocktail; vodka keeps the cucumber front and center.
- Pour 1½ oz (45 ml) of gin or vodka into each ice-filled glass and top with the cooler.
Strawberry cucumber: Ripe strawberries blended in with the cucumber turn it blush-pink and fruitier, which makes it a favorite with kids.
- Blend the strawberries with the cucumber and strain as directed. Use a little less lime juice if your berries are tart.
Spicy jalapeño: A jalapeño blended in adds a slow, gentle heat that plays against the cool cucumber and lime.
- Blend half the jalapeño with the cucumber, taste, and add the rest if you want more heat. Leave a few seeds in for a real kick.

Instructions
-
Put the cucumber, mint, lime juice, allulose, salt and 1 cup of the water in a blender. Blend on high 45–60 seconds, until completely smooth.
-
Pour through a fine-mesh sieve into a pitcher, pressing on the pulp with a spoon to get out as much juice as possible. Discard the pulp.
-
Stir in the remaining cold water, then taste and adjust with more lime or sweetener.
-
Chill at least 30 minutes, or serve right away over plenty of ice with mint sprigs and cucumber slices.
Tips for success
-
English (seedless) cucumbers have thin skins and few seeds, so there is no need to peel them, and the skin gives the drink its pretty green color.
-
The pinch of salt doesn't make it taste salty. It sharpens the cucumber and lime, as in a Mexican agua fresca.
-
The nutrition counts all the cucumber, including the pulp you strain out, so the real numbers are a little lower.
Nice to have, not needed
- A fine-mesh sieve gives a clear, silky drink — skip straining for a thicker, pulpy agua fresca.
Storage & meal prepMeal-prep friendly
- Keeps 3 days in the fridge
- Doesn’t freeze well
Reheat: Serve cold over ice; stir first.
Prep tip: Freeze a few cucumber slices to use as ice cubes, so the drink never gets watered down.
Refrigerate in a covered pitcher up to 3 days. Stir before serving, as it settles.
