Ingredients
Pork-free (almond flour): An almond flour and Parmesan crust for anyone who doesn’t eat pork. Slightly softer than the pork rind coating, and still golden and crisp at the edges.
- Use the almond flour in place of the crushed pork rinds. It browns faster, so check at 12 minutes in the oven (7 in the air fryer).
Zucchini fries: The same crunchy Parmesan coating on zucchini sticks — lighter, with fewer calories and a fresh, juicy center.
- Toss the zucchini sticks with a pinch of salt and let them drain on paper towels for 15 minutes, then pat very dry — wet zucchini steams instead of crisping.
- Bread as written and bake at 425°F (220°C) for 18–22 minutes, flipping halfway, until deep golden (10–12 minutes in the air fryer).

Instructions
-
Heat the oven to 425°F (220°C) and line a sheet pan with parchment (or heat an air fryer to 400°F/200°C).
-
Mix the crushed pork rinds, Parmesan, garlic powder and smoked paprika in a shallow dish. Beat the egg in a second dish.
-
Dip each avocado wedge in egg, let the excess drip off, then press into the crumb mixture to coat on all sides. Arrange on the pan without touching and brush or mist lightly with oil.
-
Bake 15–18 minutes, flipping gently halfway, until deep golden and crunchy. In an air fryer, cook in a single layer for 8–10 minutes; no flipping needed.
-
Serve hot with ranch for dipping and a squeeze of lime.
Tips for success
-
Choose avocados that give slightly but still feel firm; soft, very ripe ones turn mushy in the heat.
-
Crush the pork rinds in a zip-top bag with a rolling pin, or use ready-made pork rind “panko”.
-
Keep one hand for the egg and the other for the crumbs so your fingers don’t end up breaded too.
Nice to have, not needed
- An air fryer gives the crispiest fries in the least time — the oven method works well too.
Storage & meal prep
- Best eaten fresh
Prep tip: Mix the crumb coating ahead and keep it in a sealed jar in the fridge for up to a week, so the fries take 20 minutes start to finish.
Best eaten within minutes of cooking; the crust softens and they don’t reheat well.
