Instructions

  1. Spoon the cottage cheese into a shallow bowl and spread it out a little with the back of the spoon.

  2. Toss the cucumber and avocado with the lemon juice and the pepper.

  3. Arrange the salmon, cucumber and avocado over the cottage cheese and drizzle with the olive oil.

  4. Finish with dill, capers and a sprinkle of everything bagel seasoning, and eat right away.

Tips for success

  • For a smooth, ricotta-like base, blend the cottage cheese for 20 seconds before spooning it into the bowl.
  • Cottage cheese varies by brand. Full-fat, small-curd styles are the creamiest; check the label for added starches or gums.
  • Want something warm instead? Try smoked salmon scrambled eggs.

Nice to have, not needed

  • Everything bagel seasoning gives the full bagel-shop effect — cracked black pepper and a pinch of flaky salt work too.

Storage & meal prep

  • Keeps 1 day in the fridge
  • Doesn’t freeze well

Reheat: Serve cold.

Prep tip: Pack the cottage cheese, salmon and cucumber in a lidded container and add the avocado just before eating, so it doesn't brown.

Best assembled fresh. Packed without the avocado, it keeps 1 day in the fridge.
