Fudgy Keto Brownies
Dense, fudgy squares with a shiny, crackly top and pockets of melted chocolate. Melted unsweetened chocolate plus cocoa gives real depth, while almond flour keeps them tender, not cakey.

Ingredients
Cheesecake swirl: Tangy, sweetened cream cheese marbled through the batter — two desserts in one square.
- Beat the cream cheese, powdered erythritol and egg yolk until smooth.
- Spread the brownie batter in the pan, drop spoonfuls of the cheesecake mixture over it and drag a knife through in loose figure-eights. Bake 25–30 minutes, until the cheesecake parts are set and just turning golden at the edges.
Peanut butter swirl: Ribbons of warm peanut butter swirled over the top for a peanut butter cup brownie.
- Spread the batter in the pan, drizzle the warm peanut butter over it and swirl gently with a knife. Bake as usual.
Nut-free (coconut flour): Three tablespoons of coconut flour replace the almond flour, so the brownies are nut-free. Leave out the walnuts.
- Sift the coconut flour with the cocoa, baking powder and salt. The batter thickens noticeably as it stands, so spread it in the pan straight away.
- Bake 22–26 minutes, using the same moist-crumb toothpick test.
Dairy-free: Coconut oil melts into the chocolate in place of butter. The brownies are just as fudgy, and firm up more in the fridge.
- Melt the coconut oil with the chocolate. Refined coconut oil has no coconut flavor; unrefined will taste faintly of coconut.
- Check that your sugar-free chocolate chips are labeled dairy-free. Serve at room temperature — chilled coconut-oil brownies are firm.

Instructions
-
Heat the oven to 350°F (175°C). Line an 8-inch square pan with parchment, leaving an overhang on two sides so you can lift the brownies out.
-
Melt the butter and chopped chocolate together in a small saucepan over low heat (or in the microwave in 30-second bursts), stirring until smooth. Let it cool for 5 minutes.
-
In a large bowl, whisk the eggs, erythritol, allulose and vanilla hard for 1–2 minutes, until pale and slightly thickened — this is what gives you the shiny, crackly top. Whisk in the warm (not hot) chocolate mixture.
-
Sift the almond flour, cocoa, baking powder and salt over the bowl and fold just until no dry streaks remain. Fold in the chocolate chips, plus the walnuts if using.
-
Spread the batter into the pan and bake 20–25 minutes, until the edges are set, the top looks dry and lightly crackled, and a toothpick pushed in 1 inch from the center comes out with moist, fudgy crumbs. A perfectly clean toothpick means they are overbaked.
-
Cool completely in the pan, then chill for 1 hour for the cleanest cuts. Lift out by the parchment and cut into 12 pieces.
Tips for success
-
Allulose is what keeps these fudgy and moist (all-erythritol brownies are drier and can turn crunchy in the fridge), but it browns quickly — if the top darkens before the center is done, lay foil loosely over the pan.
-
Dutch-process cocoa (cocoa treated to tame its acidity) gives a darker color and rounder, less bitter chocolate flavor than natural cocoa.
-
Serve slightly warm with a scoop of no-churn vanilla ice cream for a brownie sundae.
Nice to have, not needed
- A metal pan bakes most evenly — if you use glass, start checking 3–5 minutes early.
Storage & meal prepMeal-prep friendly
- Keeps 7 days in the fridge
- Freezes up to 3 months
Reheat: Serve at room temperature or cold (they get fudgier); warm 10 seconds in the microwave for a gooey brownie.
Prep tip: Cut before freezing and wrap the squares individually for single-serve treats.
Airtight at room temperature 2 days, refrigerated up to 1 week (they get even fudgier cold), or frozen up to 3 months.
