Instructions

  1. Heat the oven to 400°F (200°C) and line a sheet pan with parchment.

  2. Microwave the mozzarella and cream cheese in a large bowl for 60–90 seconds, stirring every 30 seconds, until completely melted and smooth.

  3. Stir in the almond flour and baking powder, then the egg. Knead with damp hands into a smooth dough. If it’s too sticky, chill it for 10 minutes; if it stiffens, microwave it for 10 seconds.

  4. Roll the dough between two sheets of parchment into a rectangle about 12 × 8 inches (30 × 20 cm). Cut it into 24 strips about 1 × 4 inches (2.5 × 10 cm).

  5. Wrap a strip around the middle of each sausage, pinch the end to seal and set it seam side down on the pan. Sprinkle with sesame seeds, if using.

  6. Bake 12–15 minutes, until deep golden and the sausages are steaming hot (165°F/74°C). Cool 5 minutes and serve with mustard.

Tips for success

  • Use fully cooked cocktail sausages, or cut regular hot dogs or smoked sausage into 2-inch (5 cm) pieces.
  • Dry sausages are key: any moisture keeps the dough from sticking, and the wraps unravel.
  • The same dough makes pizza bites and fathead pizza.
