Instructions

  1. Heat the oven to 325°F (165°C) with a rack in the lower middle.

  2. In a Dutch oven or other oven-safe pot over medium heat, cook the bacon for 6–8 minutes, until the fat has rendered and the bacon is browned but not yet hard. Lift out about a third of it for the top.

  3. Add the onion to the bacon fat and cook 5 minutes, until soft and golden at the edges. Stir in the garlic for 30 seconds.

  4. Add the tomato sauce, tomato paste, sweetener, vinegar, mustard, Worcestershire, smoked paprika, salt, pepper and water. Simmer 2–3 minutes, stirring, until the sweetener dissolves and the sauce is glossy.

  5. Stir in the black soybeans, smooth the top and scatter over the reserved bacon. Cover and bake 45 minutes.

  6. Uncover and bake 15–20 minutes more, until the sauce has thickened, darkened at the edges and clings to the beans. Let stand 10 minutes before serving — it thickens further as it cools.

Tips for success

  • Black soybeans stay a little firmer than navy beans and never turn mushy, but they soak up the smoky-sweet sauce beautifully. Most of their carbohydrate is fiber, which is why a cookout-size scoop has so few net carbs.
  • Allulose browns and turns syrupy like brown sugar; erythritol works but can recrystallize as leftovers cool. For a deeper molasses note, add 1 teaspoon of blackstrap molasses — about 0.6 g more net carbs per serving.
  • Short on time? Simmer on the stove, covered, over low heat for 30 minutes, then uncovered for 10–15 minutes, stirring often. Serve with pulled pork, coleslaw and keto "cornbread".

Nice to have, not needed

  • A Dutch oven goes from stovetop to oven in one pot — otherwise make the sauce in a skillet and bake in a covered baking dish.
