Ingredients
Dairy-free (coconut cream): Thick coconut cream replaces the butter. It blends into an even creamier, latte-like mug with a hint of coconut.
- Blend exactly as for the butter version. Coconut cream foams even more, so leave extra room in the blender.
Mocha: A spoonful of cocoa and a little sweetener turn it into a frothy, sugar-free mocha.
- Add the cocoa and sweetener to the blender with the hot coffee, so the cocoa dissolves completely instead of floating in dry clumps.
Bulletproof chai: Strong spiced black tea instead of coffee, for a frothy, buttery chai with less caffeine.
- Pour just-boiled water over the tea and spices and steep 5 minutes, then strain out the leaves or remove the bags.
- Blend the hot tea with the butter and MCT oil until frothy. A pinch of salt rounds it out, the way butter tea is served in Tibet.

Instructions
-
Brew the coffee a little stronger than usual; the added fat mellows it, so a bolder brew tastes balanced.
-
Fill your mug with hot water to warm it while you blend.
-
Put the hot coffee, butter and MCT oil in a blender. Remove the center cap from the lid, cover the opening with a folded towel and blend 20–30 seconds, until pale and creamy with a thick layer of foam.
-
Empty the mug, pour in the coffee and dust with cinnamon if you like. Drink right away while the foam is thick.
Tips for success
-
Blending, not stirring, is what makes it work. It emulsifies the fat into a smooth, latte-like drink instead of leaving an oil slick on top. A handheld milk frother also works for a single mug.
-
MCT oil can upset some stomachs in larger amounts. Start with 1 teaspoon and work up to a tablespoon over a week or two.
-
Prefer something sweet and iced? Try a sweet cream cold brew instead; butter firms up in cold coffee.
Nice to have, not needed
- A handheld milk frother works for a single mug — a blender gives the thickest foam.
Storage & meal prep
- Best eaten fresh
Reheat: Best made fresh; if it separates, rewarm and blend again.
Best made fresh. The fat separates as it cools, so re-blend if needed.
