Ingredients
Antipasto skewers: Folded salami and green olives join the tomato, basil and mozzarella for a heartier skewer that works as a light meal.
- Thread a folded piece of salami and an olive onto each skewer along with the tomato, basil and mozzarella. Dress as written.
Seared halloumi: Golden, squeaky seared halloumi instead of fresh mozzarella — a warm, salty twist that holds its shape on the stick.
- Sear the halloumi cubes in a dry nonstick skillet over medium-high heat for 1–2 minutes per side, until golden.
- Cool for a few minutes, then thread with the tomatoes and basil. Halloumi is salty, so skip the flaky salt.

Instructions
-
Drain the mozzarella and pat it dry. Fold any large basil leaves in half.
-
Thread a tomato, a basil leaf and a mozzarella ball onto each short skewer or toothpick.
-
Arrange on a platter. Whisk the olive oil and balsamic vinegar together and drizzle over just before serving, then finish with flaky salt and pepper.
Tips for success
-
Skip store-bought balsamic glaze — it’s much sweeter and higher in carbs than plain balsamic vinegar whisked with oil.
-
For a change, swap the balsamic drizzle for a spoonful of basil pesto loosened with olive oil.
-
Salt the skewers only at the last minute; salt draws juice out of the tomatoes and leaves a puddle on the platter.
Storage & meal prep
- Best eaten fresh
Reheat: Serve cool or at room temperature
Prep tip: Thread the skewers up to 4 hours ahead and keep them chilled and undressed; drizzle and salt just before serving.
Assemble up to 4 hours ahead and refrigerate undressed. Let stand 15 minutes at room temperature, then dress just before serving.
